The simplest method is to add a carbonate to an acid. Carbon dioxide will be generated.

Some combinations will be too slow, the acid is not reactive enough, or the salt produced as the other product is insoluble and precipitates out, covering the carbonate, and preventing further reactions. ( You could try vigorously stirring to keep the salt suspended).

The one most commonly used is calcium carbonate (limestone rocks, so cheap) and hydrochloric acid (widely available, cheap and a strong acid).

In the case of calcium carbonate and hydrochloric acid, place the reactants in a flask with a bung and delivery tube into water. Collect the gas bubbles as they appear.
