• Some solids decompose or some, like sugar may get charred on heating to dryness.
• Some impurities may remain dissolved in the solution even after filtration which on evaporation contaminates the solid.

General crystallisation is better than evaporation in two ways.
> In evaporation, the solution needs to be at the boiling point during the whole process, which might degrade the solute.
> While the crystals are being formed, the solute molecules throw most impurities out from the crystal lattice because they want to be arranged in a regular manner. Which does not happen in the evaporation process. So the crystals have higher purity compared to the product you get from the evaporation.
