Milk is converted into curd or yogurt by the process of fermentation. Milk consists of globular proteins called casein. The curd forms because of the chemical reaction between the lactic acid bacteria and casein. During fermentation, the bacteria use enzymes to produce energy (ATP) from lactose.

MATERIALS REQUIRED:

Some milk in a kitchen pan or steel bowl with a lid, a gas stove or burner, and a Teaspoon of curd.

PROCEDURE:

❥Slowly heat the milk on the burner until it is around 35°C .Do not boil.

❥Cool till the milk is warm.

❥Add a teaspoon of curd and mix well.

❥Cover the bowl with the lid.

❥Leave it undisturbed for 4-5 hours.

❥Milk is set to form curd with a smooth and creamy consistency.

❥Lactobacillus bacteria present in the teaspoon of curd convert the milk into curd.
