Fermentation is the process by which glucose is converted into either alcohol or lactic acid in the absence of oxygen. It is also known as anaerobic respiration. Fermentation occurs in some bacteria, yeasts and in the muscles during heavy exercise.It produces various commercially useful products like alcoholic beverages, foods enriched with different nutrients, dry sausages etc. For example, Saccharomyces cerevisiae also known as brewer's yeast, is used for fermenting malted cereals and fruit juices to produce ethanol.
