Heating of sugar is a chemical change- As the sugar deforms on heating (Loses its properties, change in composition).
Sugar (On heating)→ New compound
Heating of Ammonium chloride is a physical change- It only changes its state but composition remains same.
Ammonium chloride (Solid) (On heating)→ Ammonium chloride (Gas)
