the pH of the small intestine is maintained mainly by bicarbonate ion that is secreted by the pancreas.
A major gastrointestinal hormone secretin is released because of possible HCl presence in the duodenum (from the stomach).
Secretin stimulates the Sodium Bicarbonate release by the pancreas.
pH of about 6 is considered somewhat optimal.
