when ester reacts with sodium hydroxide, the ester is converted back to alcohol and sodium salt of carboxylic acid. This reastion is known as saponification reaction because it is used for the preparation of soap.

CH3COOC2H5--(NaOH)------>C2H5OH + CH3COONa

=> These are actually a sodium or potassium salt made by combining an organic acid with a alkali ( water dissolved base ).

Now, how these soaps are formed?

»» These are formed by fats or oils. On heating the oils and fats with sodium hydroxide ( NaOH - alkali ), then they split up to form sodium salt of the respective fatty acid.
