Yeast is the precursor to baking powder and baking soda. Before chemical leavening was developed theywould use yeast in the bread dough toget a rise out of the bread. The rise is provided by the carbon dioxide that is created by the yeast.

The yeast will need some time to work, thus many recipes that call for yeast have a variation of “cover and place in a warm place until double in size”. During this time the yeast eats some of the sugar in the dough and generates a small amount of alcohol and CO2. Once the bread is baked,the heat in the oven will kill the yeast and leave behind the air bubblesin the bread.

So the baking industry likes to capture the yeast burps in your bread.
