Here are some steps to prepare khichdi -
- We usually dry roast dal on a low to medium flame until lightly golden . Cool and store in a jar . whenever needed rinse the Dal and use .
- This helps to make khichdi more aromatic.
- Rinse ½ cup rice and ½ mong Dal in a pot either separately or together. Soak them until the onions and tomatoes are chopped.
- Chop onions, tomatoes, green chillies and ginger.
- You can add veggies like carrot , peas , bean or potato .
- Heat a cooker or pot with 1 to 2 table spoon ghee or oil.
- when the ghee melts add ½ to ¾ teaspoon cumin seeds ( jeera) and 1 bay leaf ( optional ) .
- Saute on a low heat until aromatic. Then add 1 pinch of Hing.
- then add ½ to ¾ teaspoon ginger in it .
- Add chopped onion and green chillies in it. saute well untill the onions become golden brown.
- Then add small chopped tomatoes , ¼ teaspoon turmeric ,½ teaspoon salt . you can also add ¼ teaspoon of red chili.
- Saute until tomatoes turn mushy .
- Drain the dal completely and add here. fry for 3 to 4 minutes .
- then add the drained rice . Pour 3 to 4 cups of water. Mix well and taste the water .
- on a medium flame, pressure cook it for 4 whistle
- when the pressure release naturally taste it.
- transfer to a serving bowl and add a teaspoon of ghee in it .
