How many Greek alphabets are used in maths? Are there others than Omega and Phi?

-Theta (θ), phi (φ), psi (ψ) are usually used for angles. Capital psi (Ψ) is also used in physics for wavefunctions (mainly quantum mechanics).

-Omega (ω) is used for various quantities, but mainly in physics such as circular frequency. Also used for angles from my experience.

-Gamma (γ), delta (δ), zeta (ζ), ksi (ξ) and epsilon (ε) are often used to pin down some very specific functions (Kronecker delta, Riemann's zeta function etc). Zeta is also sometimes used to mark roots of the first derivative of Bessel functions.

-Lambda (λ), mu (μ), nu (ν), sigma (σ) and kappa (κ) are often used as constants (in physics, usually non-quantized ones). Capital letter sigma (Σ) is also the symbol for sums.

-Pi (π) is the famous number 3.14.... Lower case and capital pi (Π) are also used for some special functions (Gauss's prime number function for example).
