Between 20 litres to sometimes 50 litres. Completely depends on the fat content of the milk.
There’re a 4 major factors affecting the fat content of milk:
- Season
- Diet
- Breed
- Period of lactation
During the winter seasons the fat content in the milk is higher than the summer. So during winters one would require less quantity of milk to attain a kg of ghee.
Also the type of feed the cow intakes. If the cow is fed with lots of concentrated feed like oil cakes and bran. Then the cow will produce fat rich milk. Thus more less quantity to extract a kg of ghee.
Finally breed of the cow also influences the quantity of ghee per litre. Desi breeds yield more ghee per litre. Buffaloe milk contains more fat than cows milk. Therefore more less amount Milk required to obtain a kg of ghee.
The period of lactation, i.e, the fat content will be high when the cow had delivered the calf. As the time and calf grows the yield decreases so does the fat level. Thus affecting the Milk to ghee conversion.
Soa well maintained, Desi cows and bufalloes, During it’s early stage of lactation will produce milk with high fat content. Thus high conversion. At such periods, one may be able to obtain 1 kg of ghee from 17–20 litres. Ratio: 17–20:1
