maximum number of moles acetic anhydride can react with one mole of glucose = 5

we know, glucose forms penta acetate with acetic anhydride. this is formed by the reaction between five hydroxyl group {e.g., -OH group} present in glucose with five number of moles of acetic anhydride.

actually, this is example of ester formation between between hydroxyl group of glucose and carboxylic group of anyhydride.
