If you are talking of an unelectrified acoustic guitar them basically according to my knowledge, which may be limited, there's only two types of sounds that a guitarist can produce on the instrument that is at the standard tune EADGBE :

Normal pitched sounds inherent to the timbre of the guitar with various overtones above the basic pitch ranging from the lowest E note of the open 6th string at 82.5 Hz to the highest note of the fretted 1st string on the 19th fret at 1018 Hz.

Harmonic pitches of the guitar where the ‘Harmonics’ are produced by just momentarily placing lightly (not pressing to fret) just above the frets at Nodal points (dot marked frets) the fretting fingers and picking the strings at that moment before the fingers is released from string to produce pitches much much higher than the normal fretted pitches of the guitar., and sound very pleasant like high frequency tinkling bells.

Many Classical guitarists employ Harmonics to play very high octave registers in their solos and these were invented a few centuries ago.Among modern electric guitar soloists are 1. Steve Vai 2. Joe Satriani 3. Tommy Emmanuel (who i feel is the best exponent of harmonics playing) among others. Do watch these gentlemen on You Tube.

These so called Harmonic pitches are of 2 types : ( a) Natural Harmonics : as discussed above . (b) Artificial Harmonics : where a note is fretted lower on the fretboard upto the 7th fret max. on my 19 fret classical guitar (12 frets are required above the fretted note for this) then the index finger of the picking hand is placed lightly on the string 12 frets above the fretted note of the same string and the ring finger / little finger picks the note in exactly the same action as described above.

Please look up tutorials on how to pick harmonics on the guitar. Tommy Emmanuel has a discussion and demo in one of the chapters of his 2 hour guitar tutorial and so does Tenant Scott have a similar chapter on his ‘Pumping Nylon’ 2 hrs. Video.

Hope this was educative to most of you guitar players out there. Do practice. The Artificial harmonics on guitar is difficult but possible for any seriou guitarist. All the best to you all.
