the visa department doesn't care if you have paid your taxes or not. It only cares about 2 things.
- 1. Do you have enough money for the trip, including travel and stay.
- 2. Do you have enough ties to your home country so that you will go back once your work in Europe is finished.

then write them a letter explaining why you are going why you will return and also why you have not included your tax returns.
