Thus, the nutrient capacity is different like, protein, energy, minerals cannot be more affected by storage. On the other hand, spinach, lettuce etc will retain the nutrient value in high humidity. Potatoes, carrots etc will be best when cool. At the end, ripen fruits must be kept at room temperature.
