The more reactive a metal is, the easily it's ions are formed and the more easily they bond with other ions, as they need to form a stable bond to 'survive'. Hence, reactive metals are used for electroplating, such as copper, gold, silver, platinum, etc. As far as galvanisation goes, zinc is a fairly reactive candidate so it's ions are ready to form bonds with other ions to 'survive'(rather stabilise).
