salt absorb water content in food. it is common knowledge that food items with less water last longer. so salt reduces reduce water in food and helps in preservation

Salt is used to preserve food .Food can be spoiled only through the growth of microorganisms like bacteria and fungi in it.Those microorganisms can't enter salty and hypertonic conditions. So the microorganisms can't grow by the usage of salt.In this way salt helps in preservation . Hope this helps you
