Saponification:

The saponification is the process of reaction between a fatty acid with a strong alkali giving out soap. The saponification number is defined as "number of milligram" of the KOH required to neutralize a fatty acid to give out soap.

The more of the saponification number, the stronger is the fatty acid. So, the harsh will the soap be. Generally, less saponification number refers to "short-chain fatty acids" and more saponification number refers to longer chain fatty acids.
