Soil fertility is maintained under organic farming through following ways:

1) By providing natural fertilizer: the fertilizers used in organic farming are made from natural things and doesn't include chemicals. The natural fertilizers help the soil to replenish the lost nutrient value in a better way as compared to the chemical fertilizers.

2) No use of harsh chemicals: not just fertilizers, every other thing used in organic farming is free of chemicals and is purely made out of the naturally occurring things and the waste from our homes.

The organic farmers maintained their soil by using compost made from hay, leaves, straw, crop residues, etc in the soil.
