If you right-click any one of those folders, you can then use the Location tab to move the folder. For example, if you want documents to actually be in a folder on your desktop called "Stuff", you can surely do that. ... You can't just out-right delete the folder until you've set a new location with those options. If you try, it will come back because it is a critical shell folder. After you use that option to move it, you can delete the old one.
