Formation of curd from milk :
Curds are a dairy product obtained by coagulating milk in a process called curdling. The coagulation can be caused by adding rennet or any edible acidic substance such as lemon juice or vinegar, and then allowing it to sit. The increased acidity causes themilk proteins (casein) to tangle into solid masses, orcurds.
Why curd becomes sour :
Curd is formed when Lactobacillus bacteria rreproduce. If the curd is not transferred to a cool place, then curd turns sour because the bacteria continue to multiply and produce more lactic acid inside the milk. This lactic acid makes curd sour in taste.
