Ingredients for 6 Servings

1 cup soya nuggets

1 1/2 cup basmati rice

1/2 cup peas

2 medium sliced onion

1 medium tomato

3 tablespoon ghee

3 tablespoon vegetable oil

2 clove

1/2 inch cinnamon stick

1 leaf bay leaf

2 green cardamom as required

2 tablespoon hung curd

1 teaspoon lemon juice

1 handful mint leaves

1 handful chopped coriander leaves

4 pinches salt

1/4 teaspoon turmeric

10 cashews

6 green chilli

2 clove

1/2 medium chopped onion

1/4 inch peeled ginger

6 cloves garlic

2 tablespoon coriander leaves

2 tablespoon mint leaves

3 cup water

How to make Soya Rice

STEP 1

Soak the basmati rice in hot water for 10 minutes. Drain and keep aside.

STEP 2

Combine all the ingredients for dressing including cashewnuts, green chillies, cloves, onion, ginger, garlic, coriander leaves and mint leaves and grind to a smooth paste.

STEP 3

Soak the soya chunks in water for 10 minutes. Then gently boil them for 10 minutes and remove.

STEP 4

Drain the water and squeeze dry the soya chunks. Then chop them into small pieces.

STEP 5

Heat oil and ghee in a pressure pan.

STEP 6

Add the mint leaves, bay leaf, cinnamon, cloves and cardamoms. Fry for 45 to 60 seconds.

STEP 7

Add the onions and saute until golden. Add tomatoes and cook till the oil starts to separate.

STEP 8

Add the chopped soya, green peas, turmeric powder and cook for 3 minutes. Add the curd and stir well.

STEP 9

Now add the ground paste and mix until evenly combined.

STEP 10

Add rice and pour 2 to 3 cups of water. Adjust as required. Add salt, lemon juice and coriander leaves.

STEP 11

Mix well and cook for 2 minutes. Cover the pan with a lid and cook on low flame for 10 minutes.

STEP 12

Remove and transfer to a serving bowl. Serve with raita.
