How can I write a poem in Sanskrit?
For that you have to learn Sanskrit and Sanskrit poetic meters.
Sanskrit Poem meters are based on letters count, unlike syllables count and arrangement of english poem or Short/Long count (Matric मात्रिक छंद ) and arrangement (वर्णिक छंद) of Hindi and Urdu.
Considering, the time involved in covering all sanskrit poetic metrical forms, I am illustrating only 2 meters Gaytri (गायत्री छंद) and Anushtup (अनुष्टुप छंद)
1 Gaytri Meter
This has 3 lines each of 8 letters. Total count 24
For example consider the 1st verse of 1st chapter of 1st Mandal of 1st Veda ie Rigved. Each verse of Rigved has 4 entries . The sage who told the chapters which contain the verse. Here it has been told by 2 sages. Then the God to whom it is offered and the metrical form in which it is composed and the 4th information is the note in which it is to be sung, here it is Sa known as Shadaj.
ऋषि: (Rishi)/Sages :- मधुच्छन्दाः वैश्वामित्रः ( Madhuchhanda, Vishwa mitra )
देवता (Devataa) :- अग्निः (Agni)
छन्द: (Chhand) :- गायत्री (Gayatri)
स्वर: (Swar) :- षड्जः ( Sa)

अ॒ग्निमी॑ळे पु॒रोहि॑तं
य॒ज्ञस्य॑ दे॒वमृ॒त्विज॑म्
होता॑रं रत्न॒धात॑मम्
Meaning
मैं अग्निकी उपासना करता हूँ जो यज्ञके देव, पुरोहित, ऋत्विक्, होता एवं आनंद-ऐश्वर्यका विधान करनेमें श्रेष्ठ हैं ।
I worship Lord Agni (Fire God) who is supreme in prescribing of Gods, Priests , Ritviks (Special priests) , Hota (Those who can invoke Gods for performance of Yangya and Pleasure of Yangya ( Special type of worship with altar and fire)

कर्मण्येवाधिकारस्ते
मा फलेषु कदाचन ।
मा कर्मफलहेतुर्भू:
मा ते संगोऽस्त्वकर्मणि ।
Anushtup meter has 4 lines of 8 letters each. Total letters count is 32. In every line , the 6th letter (का, दा, हे, कर ) is Long (Guru) and 7th letter is alternately Long and short . That is line 1 &3 will have 7th letter as Long रस् और तुर् ) and 2nd & 4th short. (च, म). 6th letter has been made bold in line 1,2 and 3.
These two verses deals with all the fundamentals of Sanskrit Poem on which you can build upon if interested.
