On heating , baking soda decomposes into water and carbon dioxide which helps in making the cake spongy.

Hope it helps!

It wont affect the taste of the cake, it will just make it rise and spongy.
When baking soda is used, carbon dioxide is released. This CO2 makes the cake soft and fluffy.
