Pancreas carries out the digestion of proteins, some carbohydrates and lipids. If we remove pancreas from a body, the protein part of the food will go undigested.  

Pancreas contains Trypsin and Chymotripson that breaks down protein into simple components. It also contain amylase to digest carbohydrates remain undigested in mouth.  

All these functions will be halted if pancreas is removed from the digestive system.
