Normal milk at 15.55 degree centigrade, has a specific gravity of 1.030 (LR 30). When the reading shows less than LR 30, then it means water has been added to the milk.

A Lactometer works on the concept of buoyancy, making use of Archimedes Principle of density of fluids.  A Lactometer is calibrated to the density of milk and any adulteration with water can easily be detected by the reading on the scale.
