I thing that can be done to protect the vitamins and minerals content of food when you are making it ready to eat​ is steaming. We can steam and eat the food instead of cooking(boiling/frying) because due to that vitamins and minerals also disappear along with bacteria. But due to steaming bacteria dies but the nutrients are there only.
