In order for the molecule to leave the liquid surface and escape as a vapor, it must take heat energy with it.

➡️The heat that it takes with it comes from the surface from which it evaporated.

➡️Since the molecule is taking heat with it as it’s leaving, this has a cooling effect on the surface left behind.

➡️This is how evaporation causes cooling.

In an open vessel, the liquid keeps on cooling. The particles of liquid absorb energy from the surrounding to regain the energy lost during evaporation. This absorption of energy from the surroundings make the surroundings to cool.
