Humans cannot digest Cellulose because it is a special type of Carbohydrate which can be only digested by Ruminants

Cellulose is digested in the organ appendix. In humans appendix is not active. In ruminants there is appendix and it's secretion cellulaze therefore they can digest cellulose.
