When you say hummus most people are thinking of the dip or spread called hummus bi tahini or chickpeas w/ sesame seed paste dip. Hummus translates to chickpea in Arabic.

From archaeological digs, we know that chickpeas, garlic, and sesame seeds and oil existed in the Ancient Middle East. The last major ingredient lemons were introduced to the area in 700 CE.

Some say the origin of hummus goes back to 13th century Cairo, Egypt and a Medieval cookbook called "Kitab Wasf al-Atima al-Mutada" (Arabic for ‘The Description of Familiar Food’) The recipe is called “Hummus kasa, ” lacks lemon and garlic, substituting vinegar instead. A Syrian Medieval cookbook "Kitāb al-Wusla ilā l-habīb" (also 13th century) that has pureed chickpeas and lemons is similar to hummus also.

Modern hummus may come from Damascus, Syria 18th Century where the recipes are very similar to what we eat and call hummus bi tahini today.

There is no real proof as to the exact location of hummus, but I think most people will agree it is the quintessential food of the Middle East.
