Purpose of hydrogenation

To convert a liquid oil into a solid fat. When solid fats of the right consistency are expensive or not available, hydrogenation, sometimes in combination with other processes such as interesterification or fractionation, may provide a way to produce the desired fat.

To stabilize the oil, make it solid and to prevent it from oxidation spoilage

Explanation:

  • In the hydrogenation of oil, hydrogen gas is used to change the liquid oil like vegetable oil into semi-solid or plastic oil for some application like in shortenings and margarine.
  • It plays an important role in stabilizing the oil and protecting the oil from oxidation. Hydrogenation occurs in the presence of catalyst like nickel, palladium. Non- catalyst hydrogenation requires high temperature.
  • In hydrogenation reaction, the unsaturated liquid oil is reacted with hydrogen absorbed on the catalyst.
