I dont understand why we are doing: x 3 -b 3 =1+(x) ×(b) ×3???

The question is not completely given,   Given  x - b = 1

so   (x - b)³ = x³ + 3 x² (-b) + 3 x (-b)² - b³
            1³   =  x³ - 3 x b (x - b)  - b³
             1   =  x³  - 3  x  * b * 1  - b³
            1   = x³ - b³  - 3 x b

So  x³ - b³ =   1 +  3 * x * b
