Case 1:

Before The dough was dropped it has Gravitational potential energy acting on it , which changes into kinetic energy after the dough is released.

Case 2:

Just before the ball dropped the floor ,it has kinetic energy which will further changes to potential energy .

Case 3:

After the dough hits the floor ,The kinetic energy changes to potential energy and potential energy changes to Sound energy and Heat energy (in a very little amount).
