Why is watching a video sometimes better than watching a live demonstration on how to complete an activity (e.g. science experiment)?

why is watching a video sometimes better than watching a live demonstration, because you could look at the video as many times as you want to help you understand some on the smaller details while a live demonstration can only been seen once being able to watch as many times as you want can let get info you may have missed the first time but as in a live demonstration you could miss something and will be unable to watch again and find that info.
