I picked up a dry leaf and tried to do the iodine test. but i observed that the colour of the leaf did not change to blue - black. could you explain me why?

The leaf is not living and therefore did not produce starch. ... The starch does not necessarily have to be in the amylose helix form in order to give positive in the test, so any form of starch could give the positive.
