I saw that my mother added a little curd to warm milk to set curd for the next day. I wonder why? Explain in regards to microorganisms.

Microorganisms have a vry commertial value in industry.
Curd is prepared by the fermentation of milk by the bacteria, lactobacillus.
In this process, milk sugar is converted into lactic acid. Sour taste of curd is due to lactic acid.
