The roots of the plants take up the air necessary for their growth from the air pockets present in the soil. Roots use their root hair which is in contact with the air pockets of the soil for respiration. Also due to the roots are present underneath the soil, they are unable to get oxygen.  In this condition, the roots of plant respire anaerobically producing alcohol.
