(i) The slow decomposition of organic matter into simpler substances in the presence of enzymes is called fermentation. (ii) Carbon dioxide (CO2) gas is evolved during the process of fermentation. (iii) Glucose and fructose are formed when the enzyme invertase acts on sugar present in molasses.
