Here and is used as a coordinating conjunction which joins two sentences/words/phrases with grammatical equality. Without the word and they would have been two distinct sentences (simple sentences) as:

She sings

She dances

When a coordinating conjunction is used, the sentence becomes a compound sentence. Hence, “She sings and dances” is a compound sentence and not a simple sentence.
