when water is added to the pop it forms gypsum which is also used for fractured bones. pop should be kept in an air tight container as it may react with the moisture present in the atmosphere to form gypsum and will harden.

CaSO₄. 2 H₂O    ⇒ CaSO₄. 1/2 H₂O + 3/2 H₂O

Special precaution :

We shouldn't heat gypsum above 373 K else it will not form.
