It is not a physical change , but a biological ( biochemical )change .it comes in the category of chemical changes.
Only centrifugal residue of milk is a physical change.
Both; milk turning into curd (slow process) and curdling of milk (fast process) are chemical changes, as chemical reactions are involved and the products so obtained cannot be reversed to form the original ones.
