Because enzyme called amalayze breaks it down into maltose in our mouth.

vijetajangra: what is the meaning of maltose
surender824: it is a type of sugar
vijetajangra: ok
surender824: there are glucose, fructose, maltose etc
vijetajangra: maltose is present in our mouth or chappati
surender824: the enzyme in our mouth breaks down the carbohydrates in chappati into maltose.
surender824: later in our small intestine the maltose is broken down into glucose.
vijetajangra: ok

If a piece of chappati is chewed for sometime,it gets sweeter. This is because when we chew something it gets mixed with saliva and enzymes making it sweeter.
