Plants make sucrose during the photosynthesis process. A little of it is used in the respiration process. Major portion of it is converted into polysaccharides like cellulose and starch. They are large polymers of glucose and have thick walls.
The bonding in these polymers is strong. They are not broken immediately in our mouth. So they don't taste sweet. Our taste buds cannot detect the sucrose.
If we chew them for long, then the starch and cellulose do get broken down , by the action of amylase in the saliva. Then they taste sweet. Remember tasteless bread does taste sweeter after keeping in mouth for some time and chewing it.
