None because children is plural and one(adjective) shows singular noun hence the correct statement would be...
I saw a child

We are given in the question that the speaker made a grammatical error and how should we transcribe it. It shall be transcribed as under:

  • Transcription asked to be written only from the original copy word to word.
  • Even if there is a mistake it cannot be rectified.
  • The only thing which can be done is to add  [sic] after the mistake.
  • This shows the person using the transcription that there is a mistake in that word.
  • Actually, the sentence should have been " I saw one child".
  • So the correct answer will be the third option.
