Heya friend!!
Rajdeep here...

If water from a greater height falls on the turbine (or rotating wheel), then more force is created by it to move the turbine more fast. An AC generator works on the principle of Electromagnetic induction, according to which, if the coil (here turbine) is rotated fast, more electro motive force (emf or current) is induced.
Hence, if water falls from more height, the turbine rotates with more speed, hence more electrical power can be generated.

Thanks!!

Answer:

In a hydroelectric power plant, more electrical power can be generated, if water falls from a greater height because rise in water level causes an increase in the potential energy of it. This increase the kinetic energy of the moving water and hence produces more electrical power.
