Ripe mangoes are sweet due to presence of a sugar called fructose, when a fruit is raw its acid content is high and fructose is nearly absent. When a fruit ripens the acid content decreases and fructose content increases, hence becomes sweet.

mangoes have fructose. which gives sweet taste... when it is raw acid is high so fructose is less.. but when it ripens the acid is less so the fructose is high and tastes sweet.. which we all are addicted to it
