If we take the difference of the alphabet we get a pattern such as
4 11 4 4 4 4 for the word MUKESH - PENOVK
4 4 13 4 4 for the word STOCK - VWAFN
if we give the same pattern to , We getting as
4 4 4 15 4 4 that is, NQLUKW for KNIGHT
So Answer is NQLUKW

The logic here is :
For non-vowels, the third alphabet from the given alphabet is coded.
M - N - O - P
For vowels, A - E - I - O - U
The second from the given alphabet is used in the code.
U - A - E
Therefore, KNIGHT is coded as NQUJKW
