if salivary glands are not secreting saliva then the food will not moisten and soften down into tiny particles this can cause choking.

If saliva is nit secreted, the process of digestion will not occur. For food requires moisture in mouth to be swallowed down the oesophagus. If it is nit moistened, then swallowing will become hard
