If the milk is left out for 7-8 hours in summer, it curdles.why does that happen ?How can be prevented?

In summer temperature is high thus it is favorable condition for bacteria in curd so it curds faster. .

I by boiling it ...it can be prevented

Because of  a bacteria that acts on it.
