actually the nature of bacteria is the not survive in hot conditions and that's why we can say that when we add buttermilk to the hot milk the lactobacillus bacteria does not survive their not form the curd ,whereas in cold milk the temperature is very low and the bacteria is less active at the temperature so they also do not form. but like warm milk from a curd when we add buttermilk to it because it is not that much of high temperature not that much of low temperature the like warm milk has the sufficient temperature for the growth of lactobacillus bacteria so hence we can say that the curd is formed and lactobacillus bacteria are grown .
